Cook eggs for exactly 12 minutes in boiling water. When done, put the eggs in ice cold water bath and peel them in the water.

Separate yolk and egg whites:
- Chop egg whites into small dices.
- Crush the yolk and whisk thoroughly with mayo, sugar, and salt. Combine with chopped egg whites.

Optional: Cut the brown crusts of the bread.

Spread butter onto both sides of the bread so the yolk sauce will not seep through it. Pour the egg mayo mixture on the bread and close the sandwich.

Cool tip: Chill sandwich the fridge for 2-3 hours covered tightly with clingwrap before eating if you don't like messy yolk spills😝 I personally can't resist to eat it right away so it's okay to skip this step haha
