Ingredients

Less than 30 minutes
2 people
  1. 180 gcucumber, about 15cm long (a few small ones are better but a normal English cucumber is OK)
  2. 1/2t.spoon salt
  3. 10 gfresh ginger (small piece the size of a cherry tomato)
  4. 1t.spoon soy sauce
  5. 1Tb.spoon sesame oil

Cooking Instructions

Less than 30 minutes

    Lightly pound the cucumber with a rolling pin until the skin is bruised all around.

    Cut the cucumber into rough chunks about the size of cherry tomatoes. Sprinkle with salt and massage into the cucumber. Leave for 10 minutes.

    Finely grate the ginger.

  4. 4

    Squeeze the cucumber with two hands to draw the excess water out, mix with the ginger and the rest of the seasonings. You can add a pinch of sugar to mellow the flavour.
