Cooking Instructions
- 1
First, prep the fish. Wrap the cod fillet with paper towels and let it absorb the moisture. Season it with salt and pepper.
- 2
Coat the fish with the flour, shake off any excess flour.
- 3
Heat the skillet and pour in the olive oil. Once the oil is hot, place the cod skin side down and sauté it.
- 4
Once the cod browns, carefully flip it over so that it won't fall apart and cook the other side.
- 5
When both sides are browned, drizzle in desired amount of sake (or white wine) and, cover the lid and let it steam.
- 6
Make the butter and soy sauce-based sauce. In a skillet, melt the butter and add the soy sauce. Mix the sauce and it is done.
- 7
Coat the cod with the sauce, sprinkle with dried basil and it is done.

Sautéed Cod and Tofu with Chinese-Style Ankake Sauce Sautéed Cod and Tofu with Chinese-Style Ankake Sauce
I made this dish with my grandfather at his house.Serve this light white fish dish with a tasty ankake sauce.Tofu goes well with this an so you can make a nice dish without using cod fillets.-I used only one frying pan but if you don't like this, use separate frying pans.-Sesame oil is for flavouring the dish. I mixed vegetable oil and sesame oil but you can use either of them.-Sprinkling sake over the cod gets rid of the strong fishy smell.-As an alternative to shaoxing wine I prefer shochu to sake. Asparagus and Potatoes Sautéed in Butter and Soy Sauce Asparagus and Potatoes Sautéed in Butter and Soy Sauce
I received a lot of Hokkaido-grown asparagus, so I fried them together with Hokkaido potatoes! Inspired by the taste of buttered potatoes, I came up with the idea to make a simple butter and soy sauce sauté.The key is not to burn the potatoes or onions! Carefully watch while cooking. Frying in olive oil is the healthiest. Butter is added after frying to maintain its flavor. The combination of the sweetness of onions brings out the sweetness of the asparagus.
