Sig's Cucumber, Basil and Lavender Salad

Ingredients

  1. 1salad cucumber
  2. Pinchsalt
  3. 1 sprigfresh basil
  4. 2 headslavender flower
  5. 75 mldouble cream
  6. 1 tablespoonsmayonnaise
  7. 1 tablespooncherry vinegar
  8. Pinchpepper

    Cut the ends of the cucumber, cut it in half. With a peeler cut long slivers of the cucumber without getting to the seeds. Sprinkle with salt.

    Set aside to release liquid from cucumber.

    In the meantime mix the cream with the pepper, vinegar and mayonnaise, mix until smooth.

    Roll up the basil, slice finely, add to the cream mix. Strip a head of lavender flowers into the mix. Squeeze out the cucumber then add it to the cream mix, gently lift it under. Sprinkle a little lavender to garnish. Best kept in fridge.

    Serve with other salads, cold meat or on its own.

I must try lavender flowers in a salad as I have some growing by my front door, can you eat any type of lavender to you know Sig? I assume you can 🤔
