Potato, Cucumber & Dill Salad

I had a bunch of fresh Dill and I needed to use it soon. You can use quite a lot of Dill for this salad. I recommend to cook Potatoes VERY soft, so that you would partially mash them when you are mixing with other ingredients. You can add Ham and Carrot to this salad just like ‘My Family’s Potato Salad’.

Ingredients

4 servings
  1. 1Cucumber *I used a small Continental Cucumber
  2. 1/4 teaspoon*alter the amount
  3. 3Potatoes *about 500g
  4. Salt & Black Pepper
  5. 1/4Red Onion *thinly sliced
  6. 4 tablespoonsSour Cream
  7. 4 tablespoonsJapanese Mayonnaise
  8. 2 tablespoonschopped Dill Leaves *plus extra for topping

Cooking Instructions

    Thinly slice Cucumber into a bowl, add Salt and massage, then set aside for a while.

    Peel Potatoes and cut into bite-size pieces, cook in salted water until very soft. Drain and season with Salt & Black Pepper.

    Squeeze the salted Cucumber to remove excess salty water. Then combine Potato pieces, Cucumber slices and all other ingredients in a mixing bowl.

    Place the salad in a serving bowl or deep plate, add some extra fresh Dill Leaves and freshly ground Black Pepper, and serve.
