Dill Pickle Pasta Salad is a traditional pasta salad with the addition of dill, lots of cheese cucumbers, and dill pickles tossed in a creamy mayo/mustard base. This creamy summer pasta salad is served cold as a side dish for potlucks, and summer parties. Talk about delicious!

Ingredients

  1. 16 ozswirly rotini pasta
  2. 1 cupdill pickles sliced
  3. 1cucumber, diced
  4. 1 1/2 tbspdried dill weed
  5. 1/2 cupshredded sharp cheddar cheese
  6. 1/2 cupshredded mozzarella cheese
  7. 1/3 cupparmesan cheese
  8. 6green onion stalks, diced
  9. 4 tbspdill pickle juice
  10. 1 cupmayo
  11. 1 tbspstone ground mustard
  12. 1/3 cupheavy whipping cream
  13. 1/2 tspblack pepper
  14. 1/4 tspcrushed red pepper

Cooking Instructions

  1. 1

    Fill large pot with water and place on stove top over medium-high heat. Cook pasta according to directions.

    In medium bowl, add the diced cucumber, green onions, to a large bowl and slice dill pickles and add to the bowl.

    Now add cheddar cheese, mozzarella, and grated parmesan cheese. Stir in mayonnaise, heavy whipping cream, dill pickle juice, stone ground mustard, pepper, and red pepper flakes

    Once pasta has drained, add it to the bowl.

    Enjoy!
