Banana cake with Lemon rind, Lemon Zest and Cinnamon

Ingredients

  1. 5 cupsself-raising flour, sieved
  2. 2 cupssugar
  3. 2 cupsoil
  4. 4large eggs
  5. 1 tbspcinnamon powder
  6. 4large bananas, mashed
  7. 2 cupsmilk, room temperature
  8. 1 pinchBaking soda
  9. 2large lemons, grate the rind, squeeze and sieve

Cooking Instructions

    Pre-heat the oven, grease and dust two baking tins. Set aside.

    Mix flour with cinnamon together, set aside.

    To the milk,add the lemon zest little by little as you mix with a wooden spoon. Set aside.

    Mash the bananas using a fork, add the baking soda, mix well, set aside.

    In a large bowl, beat the sugar with the eggs (one by one) and mix very well.

    Add the oil, mix well. Add the lemon rind, mix well

    Add alternating the flour and the milk as you mix well.

    Now add the bananas, mixing very well. Pour into the two baking tins and bake for 45minutes to 60minutes, regulating the heat at 150°c, so as to cook slow and well without burning.

    Check if well cooked/baked at the 45th minute using a fork or knife. If so, remove and let it rest for 5 to 10 minutes then transfer the cakes to the cooling racks. Let the cake cool completely before cutting. Serve with a cup of tea if your choice. Enjoy.
