Chicken salad cucumber bites

Ideal for lunch, brunch, appetizer, canapé or a simple snack, the little chicken salad cucumber bites are healthy and you can throw them together in under 10-15 minutes. They are just slices of cucumbers filled with chicken salad, but their simplicity doesn't take away from their tastiness.
You can make them ahead of time. Just make your chicken salad and chilli it along with slices of cucumber. If preferred, scoop the cucumber slices and just top them with the salad just before serving.
These pretty little bites were a creation of food I had on hand. I used leftover rotisserie chicken that no one wanted to eat again. I simply shredded the chicken and added mayo to it along with salt and pepper. The spread was yum. After topping the cucumber rounds with chicken spread, used the remaining for sandwiches!
The great thing about this recipe is the fact that it uses cucumbers as the vehicle for the chicken salad, which is a much healthier option than a couple of slices of bread.
You can omit mayonnaise and use yogurt instead as it is healthier and has a nice tang.
You can use or omit whatever fruit you like or don’t like. You can use the cheese that works best for you. As I said, I needed to clean out the fridge!

Cooking Instructions

In a bowl add mayo, shredded chicken and season to taste. Mix well. Set aside.

Arrange cucumber slices on a plate and top with the mayo-chicken mixture.

Top with green onion.
- 4
Arrange the fruit, olives and cheese.
- 5
Peel and slice the egg and season with salt and pepper. Add to the plate.

Serve immediately.

The new virtual thing going around is people making salad bars in their refrigerator. Well I rent and have an older refrigerator, and i don’t have the room but think its a great idea. Then the snackle box come out and went viral and people started to do salads bars like this as well. This is how i came about doing this. I just use what we like. I've been making this salad ever since I got married. My husband, my daughter, and all the guests I've served this to have told me that it's delicious.If you're going to eat this right after making it, you can omit the salt treatment step at the beginning to enjoy the crispy-crunchy texture of the daikon radish. Please adjust the amount of mayonnaise you use to taste. I think finely ground black pepper is better for this rather than the coarsely ground variety.
