This is a classic basic chicken salad. The chicken is the feature. It’s roasted chicken to a perfect moist juicy start and then just some seasoning and mayonaise for really flavorful chicken salad. I served it here in pita bread but it's great in a salad or on toasted bread or a soft roll.

Ingredients

  1. 2 cupsroasted chicken breast, cut up. Recipe for roasted chicken
  2. 2 tablespoonsdiced celery
  3. 1 tablespoondiced onion
  4. 1tablespon fresh chives, chopped
  5. 1 tablespoonfresh parsley, chopped
  6. 1 teaspoonfresh lemon juice
  7. 1/2 teaspoondijon mustard
  8. to taste salt and pepper
  9. 1/4 cupmayonnaise or more if you like it creamy
  10. 1 teaspoonhot sauce such as Franks red hot
  11. as neededpita bread,
  12. lettuce leaves, as neeeded
  13. as neededsliced tomatoes

Cooking Instructions

    Use fresh roasted chicken, recipe in my profile.

    Mix all ingredients in a bowl except pita bread, lettuce and tomato.

    Split pita bread in half and fill each half with chicken salad, lettuce and tomato.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
