Per serving
  • 6pork shanks
  • 1potato, cut into large pieces
  • 4guajillo chiles
  • 1ancho chile
  • 1/4small onion
  • 2garlic cloves
  • 1tomato
  • 1 pinchthyme and cumin
  • 1/4 teaspoonground oregano, or to taste
  • 1/4 teaspoonground bay leaf, or to taste
  • 1/2 teaspooncornstarch
  • 5 1/4 cupswater (1 1/4 liters)

    Place the pork shanks and peeled potato pieces in the pressure cooker.

    Blend the remaining ingredients in a blender until smooth.

    Pour the blended mixture into the cooker with the meat and potatoes, close the lid, and cook on low heat for 35 minutes after the valve rises and starts to jiggle. Once the time is up, wait for the valve to drop, open the cooker, and it's ready to serve. You can accompany it with rice or some refried beans.
