Ingredients

  • 2 tbspGhee
  • 1/2 tspCumin seeds
  • 2Green Cardamoms Crushed
  • 2Bay Leaves
  • 3-4cloves
  • 5-6Black peppercorns Crushed
  • 1 and 1/2 cup Milk
  • 1 and 1/2 cupWater
  • 1 and 1/2 cupLong Grain Rice
  • 1 pinchSaffron Soaked in 2 tbsp milk
  • 2 tspFennel Powder
  • 1 tspDry Ginger Powder
  • 2 tspSalt
  • 1/2 cupGolden Fried Onion
  • 6-8Cashew Nuts
  • 15-20Raisins
  • 6-8Almonds
  • 1/4 cupPineapple, cut into pieces
  • 2 tbspPomegranate seeds

Steps

  1. 1

    Heat ghee in a pan.

  2. 2

    When the ghee is hot, add cumin, cardamom, bay leaves, cloves and black peppercorns and let them crackle for a few seconds.

  3. 3

    Add milk, water, rice, saffron soaked in milk, fennel powder, dry ginger powder and salt and cover the pan and cook on low heat till the rice is done.

  4. 4

    Let the rice rest for 5 minutes and then fluff it using a fork.

  5. 5

    Be gentle and take care to not break the grains of the rice.

  6. 6

    Meanwhile the rice is cooking, fry the cashew nuts, raisins and almonds till golden brown.

  7. 7

    Add fried onions, fried dry fruits, pineapple and pomegranate in the rice and mix gently.

  8. 8

    Garnish with fresh coriander and serve hot.
