Kalathappam is a North Malabar dish. It is a rice cake or delicacy made of ground rice, water, coconut oil, jaggery sugar, fried onions or shallots, coconut flakes, cardamom powder.Kalathappam is a traditional sweet snack available in most of the tea chops in Kerala.

Kalathappam is a North Malabar dish. It is a rice cake or delicacy made of ground rice, water, coconut oil, jaggery sugar, fried onions or shallots, coconut flakes, cardamom powder.Kalathappam is a traditional sweet snack available in most of the tea chops in Kerala.
Steps

Wash rice thoroughly and soak in water for 4-5 hrs. while ready to prepare make syrup of jaggery with half glass water.

Drain the soaked rice and put a mixie jar. Add the cumin, cardmom, salt.

Add the cooked rice. grind into paste little coarse(not too coarse amd not too fine) Take it a mixing bowl.

Finely chop the shallots and coconut pieces into bite size pieces. Take a pan/nonstick utensil/cooker(in which u r going to bake the kalathappam. Add ghee and fry the coconut pieces.

Fry the kismis and shallots too and keep aside. U have to add the hot jaggery syrup to the batter and stir continuously other wise the rice qill be cooked here and there.(this is done to get holes and line line consistensy after baked). strain it to the strainer to take out the impurities.

Stir continuously while pouring the jaggery syrup. Add in the baking soda and mix well. Add some of the kismis, coconut pieces and fries shallots amd mix well.keep asode some of the fried pieces for garnishing.

Mix well so that all the pieces get mix in the batter. Add the sesame seeds it's optional. pour some ghee/coconut oil in the pan.let it get heated on medium

Pour in the batter and let it be on medium heat for 5 mins. close the lid and after 5 mins slow down the flame and cook for 20- 25 mins (time depends on the thickness of the cake).after 5 mins when u low the flame put the left fried shallots and coconut pieces on top.

The kalathappam is ready. take out from the pan when it gets cold. cut into pieces and enjoy with black tea
