Curd Rice, a dish of South Indian origin, is actually cooked rice which is seasoned and then combined with yogurt mostly. But we can always modify it as per our needs and taste. I mostly add steamed & raw veggies to my curd rice because I enjoy it that way. You can always go for the traditional recipe but do check out my variant of Vegetable Curd Rice.

Ingredients

1 serving
  1. 1 cuprice, boiled & at room temperature
  2. 1/2 cupcurd
  3. to tasteSalt
  4. 1/2 cupcabbage, finely grated
  5. 1/4 cupfrench bean, chopped & steamed
  6. 1/4 cupgreen peas, boiled
  7. 1/4 cupcurd
  8. to tasteSalt
  9. 1 tbsppomegranate arils
  10. 10peanuts, roasted
  11. 1/4 tspghee
  12. 1/2 tsprai
  13. 10curry leaves
  14. As neededCoriander to garnish

Steps

  1. 1

    Mix rice, curd and salt and mash this mixture slightly using back of spoon. Keep in the fridge while you perform rest of the steps.

    Into bowl, add cabbage, french beans, peas, curd and salt, give it a good mix. Keep aside.

  3. 3

    Now heat ghee in pan, add mustard seeds, let it splutter and gradually add curry leaves & peanuts.

  4. 4

    Next mix the rice curd mixture with veggie curd mixture, at this point check the salt.

  5. 5

    Add the mustard tadka to the curd rice and mix well.

  6. 6

    Lastly garnish with some pomegranate arils and fresh coriander.
