I have very fond memories from when I was a child of going to carnivals and town markets with my grandparents where there would always be a fartura van and my grandmother having such a sweet tooth would always pick up a bag of these, fresh out of the fryer and scolding hot. They would never last long, by the time we arrived home they'd all be gone.

Traditionally it be made with portuguese brandy but they are just as good without.

Ingredients

  • 2 cupsplain flour
  • 2 cupswater
  • 2 tbspbutter
  • 3 tbspsugar
  • 1large egg, beaten
  • Zest of 1 lemon
  • 1 tspbaking powder
  • as neededCooking oil,
  • 1 tspsalt
  • as neededSweet cinnamon powder,
  • as neededCaster Sugar

Steps

  1. 1

    Bring to the boil in a medium to large saucepan the water, sugar, butter, lemon zest and salt.

  2. 2

    Remove from the heat and add the flour, mixing continuously. Continue cooking for 4-5 minutes over a medium heat. Allow to cool slightly, enough to handle with your hands.

    Add the egg and baking powder to the mixture and using your hands mix well.

  4. 4

    Heat the deep fat fryer.

  5. 5

    Place the mixture into a piping bag and carefully pipe directly into the oil until golden brown.

  6. 6

    In a bowl mix some cinnamon and sugar together. And line a plate with some kitchen roll.

  7. 7

    Remove the farturas onto the the plate lined with kitchen roll.

  8. 8

    Sprinkle some cinnamon sugar onto the farturas as they come out of the fryer.

  9. 9

    Best served warmed.
