Soak urad dal for 6-7 hours.

Wash properly and grind it to a fine paste/batter.

Transfer the batter to a bowl. Add in all other ingredients such as onion, green chilli, ginger, cumin seeds, hing, salt, curry leaves and coriander leaves. Mix well and beat the batter until it turns light.

Heat oil in a wok. Take a lemon sized portion of batter in between your wet fingers, slightly flat and gently drop into the hot oil. Drop 4-5 portions at a time. Fry them till golden brown on a medium heat. Repeat the process to finish making vadas with rest of the batter.

Remove the vadas to a paper towel to drain excess oil and serve hot.
