This is a Spanish dish that I’ve made vegetarian by giving it an Indian twist. It looks just like the original and tastes delicious.

This is a Spanish dish that I’ve made vegetarian by giving it an Indian twist. It looks just like the original and tastes delicious.

Slice the potato into rounds and rinse well with water. Place the slices in boiling water for 5 minutes, then remove and let cool. Slice the onion thinly as well.

In a bowl, mix the chickpea flour, all-purpose flour, turmeric, and salt. Add a pinch of baking soda and mix well. Add the chopped cilantro. Gradually add water to make a thin batter.

Lightly fry the potato and onion in oil in a pan, then add them to the batter.

Pour the batter back into the same pan and tilt the pan to spread it evenly. Cook until set, then flip and cook the other side. Your soft omelet is ready. Serve with any chutney you like.

Garnish with fresh herbs and serve hot.
