Ingredients

  1. 2 cupsAll purpose Flour
  2. 1/2 cupflour for rolling
  3. 4 Tablespoonsflour (for bonding)
  4. 1 pinchSalt
  5. 2 Tablespoonoil
  6. 1 Litreoil for deep frying
  7. 2Lemons
  8. 500 gramsgreen grams
  9. 1bulb of onions
  10. 2 bunchonions (spring onions)
  11. 1bulb garlic
  12. 1 Teaspoonpaprika
  13. 1 TeaspoonGaram Masala
  14. 1 Teaspooncardamom powder

Steps

  1. 1

    Start by making the samosa dough,get your 2 cups of flour,put in a container.Add a pinch of salt, squeeze 1 Lemon into this mixture and mix well.Knead adding water little by little until the dough is formed.cover with a tee towel.

    Prepare your filling.Boil your green grams,add salt,add paprika,add Garam Masala.Boil together but do not over cook the green grams

    Take your carrots peel and grate them using the medium part of your grater

    Peel your onions

    Chop them into small pieces

    Put 2 Tablespoon of oil into a sufuria add the 1 bulb of onion the purple one.Fry the onions until almost golden brown and add a bit of your garlic,1/4 Teaspoon

    Add carrots and cook for 2 minutes or so. add salt for taste.

    Add your green grams,stir,add the remaining garlic,add your spring onions,add Cardamom powder.Stir and cook for 2 minutes.Switch of the heat and let the filling cool down.

    Start making your samosa pockets.Divide the dough into small pieces of 30 grams each for mini samosas or you can also do 50grams for medium size samosas

    Start rolling out your dough into small circles apply oil in one of the circles.Sprinkle flour and put another circle on top of this forming a sandwich.Put aside.Do this to the remaining balls

    Start rolling out the sandwiched pieces into one round circle,making sure it's thin enough.

    Heat your pan,on low heat. Place your rolled dough on the pan. Let it dry but don't cook it through

    This is what you should have after drying your dough.Carefully seperate the pieces.

    Cut your circle into four quarter

    Make your bonding glue using the 4 Tablespoons of flour.

    Start filling your samosas into a triangular shapes,making sure you seal properly.

    Heat your frying oil,but don't make it so hot.Start frying your samosas.

    This is the final result,I love mine golden brown.You can fry yours to your liking.

    Samosas are so moist and very tasty.Garnish with the one remaining lemon
