Start by making the caramel: pour 1/2 cup sugar (100 grams) into a saucepan and heat over low heat. Once it turns golden, remove from the heat and set aside until serving.

For the flan mixture, crack the eggs into a mixing bowl. Add the sugar and vanilla, then whisk by hand or with a fork for 2 to 3 minutes. Pour in the warm milk and mix. Pour the mixture into individual ramekins or a large baking dish.

Bake at 350°F (180°C), placing the ramekins in a water bath, for 30 to 35 minutes. If using a larger dish, baking time will be longer.

Check doneness by inserting the tip of a knife into the flan.

Once cooled, refrigerate the ramekins. When ready to serve, pour the caramel over the top.
