Ingredients

  1. 1 1/4 cupsspelt flour (about 150 grams)
  2. 1 1/4 cupsrye flour (about 150 grams)
  3. 1 1/4 cupswhole wheat flour (about 150 grams)
  4. 1/3 cuppoppy seeds (about 50 grams)
  5. 1 handfulrolled oats
  6. 1/3 cupflaxseeds (about 50 grams)
  7. 1 teaspoonsalt
  8. 1 ouncefresh baker's yeast (about 25 grams)

Cooking Instructions

    Mix all the flours with the flaxseeds and poppy seeds.

    Add the crumbled fresh yeast and salt. Be careful, they should not touch immediately. Mix.

    Add water and knead with a mixer or by hand until you have a nice ball that no longer sticks (to the sides of your mixer or your hands).

    Place your dough ball in a bowl and cover with a clean cloth. Let it rise for 1 to 2 hours. You can also put the dough in a loaf pan to get a rectangular shape.
