Ingredients

  1. 1.1 poundspork in pieces
  2. 2zucchinis, chopped
  3. 1large ear of corn, kernels removed, or 1 small can of corn
  4. 2large tomatoes
  5. 1/2onion
  6. 1large garlic clove
  7. 1 teaspooncumin
  8. 1 teaspoonground black pepper
  9. 1serrano pepper
  10. Chopped cilantro to taste
  11. Salt to taste
  12. 1 tablespoonpork lard

Cooking Instructions

    Fry the pork with the pork lard until browned. Add 1/4 of the onion, sliced, water, and the serrano pepper with a little salt. Let it boil for about 10 minutes. Note: The pepper adds flavor without making the stew spicy. If boiled longer, it will burst and add heat.

    Meanwhile, blend the tomatoes, the other 1/4 of the onion, the garlic, a pinch of salt, the cumin, the pepper, and the cilantro. Add this mixture to the pork along with the corn. Let it boil for about 5 minutes. Finally, add the zucchini and let the flavors blend for another 5 minutes. Adjust the salt.
