Ukodo is a special recipe in Delta State, Sapele to be precise. Back in the 90s 😂 when I was in Sapele, I was privileged to have a peak of fulfillment enjoying this meal. Just like Waina trends in the Northern Nigeria, Ukodo trends in Sapele even in the pots of "mama put".

Ingredients

  • Meat (you may decide to use fish but I used Intestines for this)
  • Yam
  • Plantain (very optional, I just added 1)
  • Blended Pepper 🌶
  • Salt
  • Seasoning
  • Blended Pepper soup spices including calabash nutmeg
  • Saint leaves

Steps

    Boil meat

  2. 2

    Peel yam and pour into the pot of boiling meat, add pepper, salt to taste, seasoning, pepper soup spices, pour enough water about the quantity of yam and cover to cook for 10mins.

    When it's done, add the 1 ripe plantain, pour sliced saint leaves and allow to steam for a minute.

  4. 4

    Serve it watery, hot and spicy. Bon appètit
