Coronation Chicken

This is a much-loved family recipe, handed down from my mother. Her handwritten list of ingredients were not exact (eg just 'cooked chicken') and would have depended on what quantities were available at the time of making. I tend to add and adjust too, tasting as I go along!
This dish is meant to be eaten cold and is a great buffet dish. Just double the quantities to serve a larger crowd.

Heat oil in pan, add onion and cook until soft.

Stir in curry powder and cook for 3 minutes.

Add chicken stock, tomato puree, sweet chutney and lemon juice. Simmer for 5 minutes. Then set aside to completely cool.

Add cream and mayonnaise. Stir in chicken. Serve with cold rice or salad. Top with sliced banana if you have one! Enjoy!
