This is an authentic flaky layered paratha with flavourful chopped spring onions and can be served mainly in dinner as a side dish to any curries or dal with salad and coriander chutney.

Mix all purpose flour and wheat flour.Add salt,ajwain and 1 tbsp oil in the flour.Add water and knead into a dough.Keep it covered for half hour.Divide into 6 equal balls and roll out into a circular disk.There are two ways of folding the disk.One is sprinkling little oil and flour and the chopped spring onion in the disk and rolling into a long cylinder.Fold it into a coil and tuck the end underneath.Roll it again into a disk and fry.

The other way is to roll into a disk and fold like a paper fan.Twist into a coil and roll again.Press chopped spring onion on it.Heat 1 tsp oil in a frying pan and fry crispy layered spring onion paratha.Serve with any curry or chana dal and coriander chutney.
