Handvo is a traditional Gujarati savory cake made with rice, lentils and vegetables blended with spices and tempered with mustard seeds, cumin seeds and sesame seeds.
Steps

Take flour and curd in a bowl. Mix well and gradually add lukewarm water to get thick flowing consistency smooth batter. Whisk well in one direction for 5 to 6 mins. Make sure no lumps are there. Keep bowl in a warm place for 4 to 5 hours.

After about 4 to 5 hours, add salt, turmeric powder, red chilli powder, dhania jeera powder, finely chopped green coriander leaves and ginger green chilli paste. Mix well in one direction.

Meanwhile heat up the oil in a non-stick pan on low flame. Add mustard seeds, cumin seeds, sesame seeds and hing. Let it crackle.

Add baking soda in the prepared batter and gently mix in one direction. Do not over mix. Immediately pour the batter on tempering in a pan. cover the pan and cook for about 6 to 7 mins on low flame.

Flip and cook on other side for about 6 to 7 mins on low flame. Switch off the flame.

Enjoy with chutney or pickle or can be had alone.
