Ingredients

40-45 minutes
4 servings
  1. 3/4 cupyellow or green peas
  2. 3-4 tablespoonoil
  3. 1 teaspoonmustard seeds
  4. 1/4 teaspoonasafoetida
  5. 1finely chopped onion
  6. 1finely chopped tomato
  7. 1 tablespoonginger garlic paste
  8. to tasteSalt
  9. 1/2 teaspoonturmeric powder
  10. 1 tablespoonred chilli powder
  11. 1 tablespoondhania (Coriander)powder
  12. 1 tablespoongaram masala powder
  13. 4-6pav
  14. For stuffing
  15. 3-4boiled and mashed potatoes
  16. to tasteSalt
  17. 1 teaspoonred chilli powder
  18. 1 teaspooncumin powder
  19. 1/4 teaspoonturmeric powder
  20. 1 tablespoonchopped coriander leaves
  21. 1 teaspoonlemon juice
  22. Other ingredients
  23. as neededDate tamarind chutney
  24. as neededGreen coriander chutney
  25. as neededSev
  26. as neededChopped coriander leaves
  27. 1Chopped onion
  28. 1Chopped tomatoes

Steps

40-45 minutes
  1. 1

    Wash and soak peas in water for 5-6 hours and then boil in pressure cooker.

  2. 2

    In a pan heat oil. Add mustard seeds. When crackles add asafoetida. Add chopped onion and ginger garlic paste. Saute for sometimes. Add chopped tomatoes. Saute till oil seperates. Add turmeric powder, red chilli powder, dhania powder and garam masala powder. Add boiled peas and mix well. Add more water if required. Add salt and mix it. Cook for 4-5 minutes. Ragda is ready.

    For stuffing:- take boiled and mashed potatoes. Add salt, red chilli powder, turmeric powder, cumin powder, lemon juice and chopped coriander leaves. Mix well.

    Stuff Pau with potato stuffing. Cook both sides with butter till golden brown. Cut into pieces.

    In a plate pour ragda. Put stuffed Pau pieces. Apply date tamarind chutney, green coriander chutney, chopped onion and tomato, sev and chopped coriander leaves. Enjoy.
