Wash and soak peas in water for 5-6 hours and then boil in pressure cooker.

In a pan heat oil. Add mustard seeds. When crackles add asafoetida. Add chopped onion and ginger garlic paste. Saute for sometimes. Add chopped tomatoes. Saute till oil seperates. Add turmeric powder, red chilli powder, dhania powder and garam masala powder. Add boiled peas and mix well. Add more water if required. Add salt and mix it. Cook for 4-5 minutes. Ragda is ready.

For stuffing:- take boiled and mashed potatoes. Add salt, red chilli powder, turmeric powder, cumin powder, lemon juice and chopped coriander leaves. Mix well.

Stuff Pau with potato stuffing. Cook both sides with butter till golden brown. Cut into pieces.

In a plate pour ragda. Put stuffed Pau pieces. Apply date tamarind chutney, green coriander chutney, chopped onion and tomato, sev and chopped coriander leaves. Enjoy.
