Cucumber Raita

Peel then grate the cucumber.

Place into a bowl and squeeze out excess water with your hands by pressing the grated cucumber towards the bowl rim. Pour away the unneeded water.

Now mix in the yoghurt. Chop the mint leaves and add along with the lemon zest and salt (only the zest, no lemon juice necessary).
