Ingredients

  • For vada paav
  • 2ladi pavs (small squares of white bread)
  • garlic chutney
  • For The Vada
  • 1 cupboiled and mashed potatoes
  • 2green chillies, chopped
  • 1.5 tbspgrated garlic (
  • 2 tsproughly chopped ginger
  • 1 tspmustard seeds
  • 1/4 tspasafoetida
  • 6-8curry leaves
  • 1/2 tspturmeric powder
  • 1 tbspoil
  • For The Outer Covering
  • 3/4 cupbesan
  • 1/4 tspturmeric powder
  • 1 pinchbaking soda
  • 1 tspoil
  • to tastesalt
  • as neededoil for deep-frying

Steps

  1. 1

    For the vada fillling

    Chop green chillies, ginger and garlic

    Heat the oil and add the mustard seeds. When they crackle, add the asafoetida and curry leaves and sauté for a few seconds.

    Add the chopped ingredients and sauté again for a few seconds.

    Add the potatoes, turmeric powder and salt and mix well.

  3. 3

    Remove from the heat and let it cool.
    Shape them into rounds.

  4. 4

    For the outer covering

    Combine all the ingredients in a bowl and make a batter using nearly 1/3 cup of water. Add water slowly.

  5. 5

    Dip each round of the vada filling into the batter and allow it to coat the mixture well.

  6. 6

    Deep fry in hot oil, till golden brown. Drain on absorbent paper and keep aside.

  7. 7

    Assembling
    Slice each pav into half and spread some dry garlic chutney inside.

    Place one vada in each pav and serve immediately.
