Add half the butter to a saucepan heat up then add the onions and garlic 2/3 of the mushrooms, veg stock and the bay leaf. Stir and cover and simmer for 20 minutes stirring often the onions should be soft a not browned

Add the other half of the butter and chopped mushrooms to a frying pan and cook the mushrooms slightly browned 5 minutes.

Next add the Stilton cheese cut up and the parsley stir until the cheese has melted then take off let cool a little. Then add the wine and the cream stir in and set to one side.

In the saucepan take out the bay leaf and pour it into a blender and blend for 2 minutes until thick.

Pour the blended mushrooms back into the saucepan and add the mushroom and Stilton to it stir bring to the boil and simmer for 2 minutes.

Serve with a nice crusty bread.
