Ingredients

  1. ForMillet Soup-
  2. 1 cupyogurt
  3. 1/4 cupmillet flour (bajra)
  4. 3 1/2 cupwater
  5. to tastesalt
  6. 1 tspsugar
  7. 1/4 cupcorn, boiled
  8. 3 tbspmixed colour bell peppers, chopped
  9. 2 tbspcarrots, finely chopped
  10. 2 cupscilantro, finely chopped
  11. 3 tspghee
  12. 1/2 tspcumin seeds
  13. 1/2 tspblack pepper, freshly crushed
  14. 1green chilies, optional
  15. ForAchari Flatbread Crackers-
  16. 12flatbread crackers
  17. 1/4 cuponions
  18. 3 tbspcorn, boiled
  19. 3 tbspmixed colour bell peppers, chopped
  20. 2 tbspcarrots, finely chopped
  21. 1/2 tspgreen chilies
  22. 1 tbspcilantro
  23. 2 tbspmixed pickle, store bought

Cooking Instructions

    Mix the millet flour and yogurt until it is smooth. Now, whisk in the water and salt, stirring consistently to avoid lumps.

    Pour this mixture into a large saucepan and bring it to a boil. Make sure to keep stirring, otherwise it will start to curdle.

    Turn the flame on low-medium and simmer for at-least 15-20 minutes or until it thickens. Adjust the salt and add the sugar, black pepper, and vegetables. Save the cilantro for the garnish.

    Mix it together and turn off the gas. The millet soup is ready to serve and can be topped with ghee, chilies, and cilantro.

    For the achari flatbread crackers, mix together the onion, corn, bell peppers, chilli, cilantro, carrots, and pickle.

    Add a few spoonfuls of the mixture on each of the flatbreads and top with a thin layer of cheese.

  7. 7

    Bake them in an air fryer on 370°F for 5 minutes (oven - on 350°F till the cheese is melted) and serve with the millet soup! Enjoy!
