Blend Dry Red Chillies and Coconut in a blender to a coarse powder. Take care not to get a fine powder. Coarse powder is required for the perfect texture.

Take Garlic in the blender and bring to smooth paste. Do not add water.

Take coarse Chillies and Coconut powder, garlic paste in blender bowl. Add salt and Aamchur powder and blend it for few seconds. So that it gets properly mixed.

Take is in a bowl add red Chilli powder and mix well. Adding red chilli powder at last gives it the perfect red colour.

Vada Pauv chutney is ready to serve. Store it in an air tight container. Shelf life of this chutney is 2 months in refrigerator and 5 months if stored in Freezer.
