Measure out all ingredients. Wash and remove the top of the apple gourds. Cut vertically into 4 pieces but make sure you do not reach the end. The apple gourd should stay intact after the cuts. Mix turmeric, salt, red chilli powder, amchur. coriander powder and garam masala in a separate bowl.

Fill in the apple gourds with the spice mix. In a pan, heat oil and add cumin seeds, let it crackle then add the apple gourds. Fry for about a minute.

Add in any spice mix which is remaining along with some water, cover with lid and let it cook until tender. Yummy masala tindas are ready to be served with roti or rice.
