  1. 3 1/2 ozbeef
  2. 3/4 ozroasted peanuts
  3. About 3,000-5,000 VND worth of pho noodles
  4. Cilantro, mint, celery (if available)
  5. Dried garlic, dried shallots, seasoning

    Prepare and slice the beef. Marinate with oyster sauce, pepper, MSG, granulated sugar, and sesame oil (if available) for 15 minutes.

    If you buy whole pho noodles or pre-cut ones, either is fine. I prefer wide noodles, so I buy uncut ones and cut them to my liking. Boil a pot of water, blanch the noodles to clean them. Let them cool and drain.

    Preheat the oven to 340°F. Grill the beef at 355°F for 15 minutes. Flip the meat once.

    Roast the peanuts until cooked and crush them slightly. Wash the herbs. Sauté the dried shallots until fragrant. Mix the sweet and sour dipping sauce with the ratio: 1 part fish sauce + 1 part vinegar + 3 parts sugar + 5 parts water + 1/4 part garlic.

    Arrange the pho noodles, beef, and herbs in a bowl. Sprinkle with peanuts and fried shallots, and add the sweet and sour dipping sauce for extra flavor. If you like it spicy, add chopped chili. Good luck with this dish!
