5 1/2 cupssemolina flour (about 700 grams)
2 1/2 cupsgluten-free buckwheat flour (about 300 grams)
1 ozfresh yeast
2 1/2 cupswarm water (about 600 ml)
1 tablespoonfine salt
1 tablespoonextra virgin olive oil

Knead the flours with the yeast, adding half of the water.

Add the olive oil, salt, and the remaining water.

Let it rise for at least 2 hours.

Bake in the oven at maximum temperature, and after 10 minutes, lower to 430°F. For pizza, add toppings as desired.
