Tres Leches Cake with Dulce de Leche

A classic Mexican dessert, this cake is a sponge cake soaked with three different kinds of milk: heavy cream, sweetened condensed milk, and evaporated milk. It's finished with meringue and decorated with cherries. In this recipe, the three milks are mixed with dulce de leche.

In a bowl, combine the flour, eggs, vanilla extract, baking powder, and sugar. Mix well until there are no lumps.

Bake for 30 minutes at 350°F (180°C). Once baked, remove the cake from the oven and poke holes all over the surface with a fork.

Blend the three milks and the dulce de leche in a blender. Pour the mixture over the cake while it is still hot so it absorbs the milk and stays moist.

Refrigerate for about 4 hours, then remove from the pan and decorate as you like. Top with whipped cream and colorful sprinkles.

Some people like to add a bit of liqueur. I don't, but if you want to, use a little coffee liqueur.
