Ingredients

  1. 12 ozanelletti pasta (about 350 grams)
  2. 3 cupstomato purée (about 700 ml)
  3. 1garlic clove
  4. 2eggplants
  5. 5 ozprovolone cheese (about 150 grams)
  6. 2eggs (optional)
  7. as neededExtra virgin olive oil,
  8. as neededFresh basil leaves,
  9. as neededSalt,

Steps

    Make the tomato sauce with a garlic clove.

  2. 2

    Fry the eggplants.

  3. 3

    Boil the anelletti pasta. Meanwhile, cut the cheese into cubes.

  4. 4

    Combine all the ingredients in a bowl. Line the bottom of a springform pan with the largest eggplant slices. Pour the mixture into the pan, sprinkle with Parmesan or your preferred cheese, and bake at 350°F (180°C) for about 10 minutes, until a golden crust forms and the cheese melts.
