Ingredients

  • 1 cupall-purpose flour (about 120 grams)
  • 3eggs
  • 6 tablespoonsunsalted butter, softened (about 80 grams)
  • 1 cupshredded Swiss cheese (about 100 grams)
  • 2/3 cupwater (about 150 grams)
  • 2.8 ounceschorizo (about 80 grams)
  • Salt
  • Pepper

Steps

    In a saucepan, combine the water and butter cut into pieces. Heat until it comes to a boil.

  2. 2

    Remove the saucepan from the heat. Add the flour all at once, stirring vigorously.

  3. 3

    Return the saucepan to medium heat and continue stirring until the dough pulls away from the sides of the pan.

  4. 4

    Let the dough cool for a few minutes.

  5. 5

    Add the eggs one at a time, mixing well after each addition. Then add the cheese and the chorizo, finely diced. Mix until the dough is smooth and even.

  6. 6

    Preheat the oven to 400°F (200°C).

  7. 7

    Using spoons, drop small mounds of dough onto a baking sheet and bake for 30 minutes.
