Steps

In a saucepan, combine the water and butter cut into pieces. Heat until it comes to a boil.

Remove the saucepan from the heat. Add the flour all at once, stirring vigorously.

Return the saucepan to medium heat and continue stirring until the dough pulls away from the sides of the pan.

Let the dough cool for a few minutes.

Add the eggs one at a time, mixing well after each addition. Then add the cheese and the chorizo, finely diced. Mix until the dough is smooth and even.

Preheat the oven to 400°F (200°C).

Using spoons, drop small mounds of dough onto a baking sheet and bake for 30 minutes.
