I forgot that I got a kit from a supermarket produce department about 7 years ago. It had everything you need for fresh salsa. It was terrific. This recipe is based on that but I had to adjust for what I could find in the produce section in these unconventional times.

I forgot that I got a kit from a supermarket produce department about 7 years ago. It had everything you need for fresh salsa. It was terrific. This recipe is based on that but I had to adjust for what I could find in the produce section in these unconventional times.

Ingredients

4 servings
  1. 4Small Roma Tomatoes (firm)
  2. 1/2Medium Yellow Onion
  3. 1 (8 oz)can Diced Tomatoes with Green Chilies (drained)
  4. 3-4Generous dashes Lime Juice
  5. to tasteSalt and Pepper

Cooking Instructions

  1. 1

    Dice the tomatoes and onion

  2. 2

    In a medium to large bowl combine diced vegetables and can of tomatoes

  3. 3

    Add lime juice, salt, and pepper. Gently stir to combine

  4. 4

    Chill and serve with multigrain tortilla chips

  5. 5

    NOTE: the original kit I got years ago had 2 medium regular tomatoes, 1 small onion, 1 lime and 1 jalapeno pepper and said to add s&p.
