Puran Poli
Traditional maharashtrian recipe.

Wash chana daal with water and soak it for 30 minutes. After soaking take 4 whistles in a cooker by adding 1:3 water on medium flame.

Once the chana daal is cooked in the cooker take out ectra water and keep a thick bottom pan on low heat and adf chana daal. Add equal amount of sugar and cook well until sugar is melted and mixed with chana daal. Let all water get evaporated and batter will become nice soft and thick. Add cardamom and nutmeg powder.

Take a puran yantra (machine) and strain it through it. Puran is ready. Let it cool completely and keep it in the refrigerator. It will stay for 1-2 weeks.

For dough take all ingredients in a bowl and mix well. And make a soft dough. For making chapati take a small ball and stuff puran ball into it and roll thin chapathi. Roast it from both the sides by applying ghee from both the sides.

Puran poli is ready to serve hot directly from Tawa to plate. This is a traditional recipe of Maharashtra without which festivals are incomplete.
