Fried shrimp spring rolls are an easy-to-make appetizer. The spring roll wrappers turn crispy, with big shrimp inside and a flavorful dipping sauce.

Prepare the shrimp: Peel and devein the shrimp, rinse them well, and drain in a colander.

To assemble the spring rolls: Place a spring roll wrapper on a plate, add a lettuce leaf, and place a shrimp on top.

Fold the wrapper over the shrimp and roll it up tightly, wrapping the shrimp completely.

Brush the edge of the wrapper with beaten egg to seal, leaving the shrimp tail exposed. Repeat with all four rolls.

To fry: Heat the vegetable oil in a skillet over medium heat. Once hot, add the prepared spring rolls and fry.

Fry until golden and crispy. Remove and drain on a plate. Serve with sweet chili sauce.
