Kokum sharbat

Kokum sharbat one of the refreshing, cool and nostalgic summer drink with abundance of health benefits. It is a regular part of our day in summers. We get this kokum fruit in abundance in Goa. It is Sundried and stored by every House. Kokum is great for heart, it helps in fighting cancer, it is good for skin, it regulates blood sugar etc. It is full of medicinal properties that I won't be able to pen down all.
However, to make this sharbat it involves making its concentrate which we can store in the refrigerator, and enjoy this drink any time mixing just with water

In a large bowl soak kokum with 3 cups of water for 4-5 hours.

Transfer it to a blender and make a coarse paste.

Now transfer it to Kadhai, add sugar and 1/2 cup of water and stir until sugar dissolves completely.

Boil until mixture comes to a syrup consistency and keep stirring in between.

Once done put off the flame add cumin powder, pepper powder,kala namak mix well, allow it to cool and transfer the mixture to the sieve. Squeeze the pulp well.

Kokum concentrate is ready so now transfer it to glass jar or glass bottle.This concentrate can be stored in the refrigerator for 2-3 months

Now to make sharbat for 1 glass(1 cup of water) add 1 table spoon of concentrate add some ice cube squeeze few drops of lemon juice and water,stir well and this refreshing drink is ready
