Steps

Knead the dough for Puri using the above mentioned items.

Knead it well, apply oil and leave it for 15 mins.

Meanwhile, make ready for Stuffing and Pani.

For Stuffing, boil the potatoes and mash it well and add the other ingredients.

Combine all together well and keep it as a mixture.

Next grind all the ingredients for the Pani.

Add water and dilute the mixture as per your taste and add salt, lemon juice.

Now you can start doing the Puri. Knead the dough once and divide it into small portion like we do for chapati.

Dust some flour, take one ball and roll it out. Roll out thin, but not very thin.

First you can fry 1 or 2 puri for checking, whether it becomes fluffy or not. According to that you can increase or decrease the thickness of dough.

After rolling the dough, take round cutter or any round lid to make the puri shape.

Keep the oil in a medium flame, drop the puri and flip over it and cook both sides.

It should have to be in Golden brown colour so that the Puri will be crisp and stiff for long time.

Now make hole in the Puri fill the stuffing and enjoy with Pani.
