Wash the meat thoroughly and place it in a bowl. Add all the marinade ingredients (the remaining ingredients) and mix them. Then, let it sit in the refrigerator for 12 hours. It's best if the meat is completely covered; if not, turn it 2 to 3 times.

Place the meat in the roaster and bake at 390°F (200°C) for 40 minutes, then lower the temperature to 300°F (150°C) and bake for another 2 to 2.5 hours. If desired, add potatoes or mushrooms an hour before it's done!

Meanwhile, baste the meat with the remaining marinade and turn it periodically. You can also put the remaining marinade in a small pot and thicken it with a little cornstarch to make a sauce!
