Ingredients: 250 grams pasta of choice, use one, the dressing can run into; 100 grams hot pepperoni, salami or chorizo; 100 grams cheese of choice, broken or cut into small pieces; 1 sweet Italian pointed pepper, cut into small pieces; 4 small on the vine tomatoes, cut in quarters; 2 cloves chopped garlic; 1 handful frozen sweet petite pois; 2 tablespoons olive oil; 2 tablespoons balsamic vinegar; 1 teaspoon castor sugar; 1 pinch each of salt, pepper, dried or fresh oregano and thyme; Or use a dressing you prefer; Parmesan or similar cheese, optional

Needed a salad that was easy to prepare ahead, served with chicken drumsticks and coleslaw. Nice change from potato salad even though the idea came from one of my potato salads I make. #lunchideas #stayingathome #mainmeal

Ingredients

4 servings

250 gramspasta of choice, use one, the dressing can run into
100 gramshot pepperoni, salami or chorizo
100 gramscheese of choice, broken or cut into small pieces

Dressing
2 tablespoonsolive oil

1 teaspooncastor sugar
1 pincheach of salt, pepper, dried or fresh oregano and thyme
Or use a dressing you prefer
To finish
Parmesan or similar cheese, optional

Boil pasta to your liking. Set aside to cool. Mix ingredients for the dressing in a large bowl, set aside. Prepare all the other ingredients, add them to the dressing, gently mix together, pasta included. Let to stand for a few hours so the flavours can realy develop. Mix a few times gently during standing.
