Soak the channas overnight (black/white)and pressure cook them for half an hour with salt and amla powder. Be exact with the time if possible keep a look at your watch.

In a wok heat refined oil add whole spices, jeera, green chilli whole, red dried chilli, garlic, ginger and saute for a min. Add chopped onions & saute it till translucent... add tomatoes...cook for 4-5 mins.

Once you get nice aroma from your masala add dry spices. Do not add salt as the boiled chanas already has it. If you want a bit spicy can add black pepper or chilli powder. Mix all the dry spices nicely adding 2-3 tsp water. Add the boiled chanas with water you have boiled them in.

Let the chana cook with the lid on for 10 mins stirring gradually. Add sukhi methi chopped green coriander & grated ginger on the top while you serve hot. Best have with bhatura / kulcha. Enjoy!
