Leftover Potato Fries Skillet

Heat up your leftover fries. Make sure you do not use a lot of oil. Just enough to fry eggs.

Crack and beat your eggs. Add a little salt and pepper to taste.

Pour mixture over fries. Do not mix. Lower the heat and cover so that the steam can cook the top too. Check every now and use a knife to poke small holes so that it can cook through and through.
