Mae's Lockdown Couscous

My 13 year old has been set a food technology task - to create a meal from 5 ingredients that you have in your store cupboard. So, she had a rummage around and found some random ingredients that she thought looked like they needed using. And voila... a meal for the family that was quick, healthy and tasted pretty good!

Steps
- 1
Stir-fry chicken pieces in some olive oil - we cheated and used garlic olive oil for more flavour as garlic would have counted as another ingredient!)
- 2
Once the chicken is cooked through (about 10 minutes), add the butter beans and cook for a few minutes.
- 3
Meanwhile, cook the peas for a few minutes in a separate saucepan or microwave in a covered bowl with a table spoon of water for 3 minutes. It doesn't matter if they're not completely cooked as they can finish off in the pan.
- 4
Now cook the couscous by following the packet guidelines. Regular couscous can just be covered with boiling water or stock and left to absorb it. Wholewheat couscous needs to cooked for 5 mins on the stove top.
- 5
Add the spice mix into the pan with chicken and beans and cook for a few minutes whilst the couscous is cooking. Add the peas for a minute or two and cook.
- 6
Season with salt (and lime juice and chilli flakes if using)
- 7
Serve in bowls whilst hot.
