Ingredients

2 servings
  • For the Pea and Chive Pesto:
  • 1 handfulchives
  • 1 handfulpeas
  • 50 mlolive oil / garlic oil
  • 2 clovesgarlic (if not using garlic oil)
  • 50 mlwater
  • 50 ghard cheese
  • to tasteSalt and pepper
  • For the Pasta Dish:
  • 2 portionstagliatelle, linguini, spaghetti or other pasta
  • 2-4 rashersbacon
  • 1 handfultomatoes
  • 2-4 tbsppea and chive pesto
  • Starchy water from pasta

Steps

  1. 1

    Whack all the pesto ingredients in a food processor and blitz until emulsified. Add more or less oil and/or water to generate your preferred consistency.

  2. 2

    Slice bacon and tomatoes to preferred size and add to heated frying pan.

  3. 3

    Boil pasta to preferred texture (al dente or well done).

  4. 4

    When bacon/tomatoes and pasta are cooked, add pasta to frying pan, transferring some starchy water with it.

  5. 5

    Dollop in the pesto and mix through, adding more starchy water from pasta to achieve desired consistency.

  6. 6

    Serve. (Optional: Grate some hard cheese over once served.)
