Peel the boiled potato and mash them. Boil the chick peas and mash them along with potato.

Now add black salt,chaat masala, and red chilli powder to it and mix well. Pratap paste is ready.

For mitha paani.

Soak the tamarind and dates for 1/2 hour. Now grind it in a grinder. and make a fine paste.

Strain it and add jaggery,black salt,red chilli powder and cumeen powder. Add some water And cook it for 5 minutes. Mitha paani is ready.

For tikha paani.

Take all whole ingredients of tikha paani grind it in a mixser grinder to make a fine paste. Add 1 cup of water, chaat masala,salt and lemon juice to it. Add some ice cubes. Tikha pani is ready.

Now while serving add make whole in poori,add potato paste and tikha and mitha paani according to your taste.
