Stir-fry the beef. Soak the seaweed until rehydrated, then boil it with ginger to remove any fishy smell. Boil the egg for 4 minutes.

Bring the broth (dashi, soy sauce, mirin) to a boil with 1 1/4 cups water (300 ml) for 7 oz fresh noodles (200 grams). When the water boils, add the noodles and cook for 2 minutes.

Transfer the noodles to a bowl, pour in the broth, and top with beef, egg, green onions, and seaweed. Serve hot.
