Ingredients

  • 12scallops
  • 2onions
  • 1 cupwhite wine (about 240 ml)
  • 1 teaspoonTabasco sauce
  • Parsley
  • Salt and pepper to taste
  • Olive oil
  • Butter
  • Breadcrumbs
  • For the Coral Sauce
  • The coral from the scallops
  • 1garlic clove
  • 1 tablespoonolive oil
  • 1small onion
  • 1small bunch cilantro
  • 1 ounceheavy cream (about 30 ml)

Steps

    Separate the scallops from the coral and set both aside.

    For the scallops, cook the onions in olive oil over low heat for 5 minutes. Season with salt and pepper to taste, then add the wine, Tabasco sauce, and parsley. Stir for another 5 minutes, then add the scallops and cook for 5 more minutes, turning them occasionally. Place a little butter on each shell with the scallops.

    Before baking, sprinkle a layer of breadcrumbs on top. Bake for 10 minutes.

    For the sauce, heat the tablespoon of olive oil in a skillet with the garlic and cook the coral for 2 minutes on each side. Season with salt and pepper. Once cooled, blend with the remaining ingredients.
